TASTING NOTES

Bright green to pale straw in colour.

Uplifting vibrant Riesling with citrus fruits, florals and some spice notes.

Fresh and bright, wonderful length to the palate. Citrus notes echo the nose along with lemon and lime, florals plus a touch of sweet spice. Crunchy, fresh and bright rendition of Classic Clare Riesling with a salivating finish.

Winemaking

The dry ripening period delivered wonderful healthy fruit with great level of natural acidity which is always a key with this variety. We crushed, de-juiced then clarified the juice before fermentation in stainless steel which lasted for a couple of weeks at a temperature between 11-13 degrees Celsius. We stabilized the wine then bottled early to retain all the wonderful fruit flavours and acidity.
